So finally, here is the recipe for the Organic Banana Bread I posted a few weeks ago. My girls are quite impressed with this recipe especially after telling them it was vegan and organic! It is so important to teach your kids healthy mindful eating and learning habits, especially issues like refined sugar which is found in almost meals we purchase now. So this recipe does contain coconut sugar and pure maple syrup however if possible try and use an organic or natural brand one that has not been processed too many times or has any additional fillers.
So I used a large bakers tin the picture above is half of what this recipe makes. So you could halve the recipe or keep the left over mixture if you have any and bake cupcakes in the following days after.
Ingredients
6 Large Mashed Bananas.Very ripe ones are better!
3.5 tablesooons of grounded flaxseed.
2/3 cup of Almond/ Coconut Milk.
2/3 cup room temperature coconut oil.
4 tablespoons maple syrup.
Pure 1 vanilla bean De-seed
Mix all these ingredients with a beater slowly until combined. Then add in the following ingredients.
1 1/2 cups of both spelt and gluten free flour
1 cup nuts / berries / oats
2 teaspoons baking soda
1 teaspoon baking powder
3/4 cup coconut sugar
When all ingredients are nicely combined try and not over beat the mixture pour into your pan lined with baking paper. Bake in an oven at 170 degrees for around 1 hour 20 minutes. I usually like to check mine at the hour mark and place a skewer in the centre to test how moist the loaf is as sometimes at may take an extra 10 minutes to cook right through. I like to decorate the top with sliced banana and a drizzle of carob syrup or vegan Choc chips at the hour mark then cover with alfoil and continue baking until cooked. But can also decorate after the Banana Bread is made……Enjoy!
