How good is caramel slice…..it’s even better with a layer of crunchy Biscoff!
This adds an extra element to the traditional caramel slice and can become highly addictive! The great thing is that it is quite simple to make. The only downside is waiting for each layer to set.
You can make this slice by hand if you don’t have a beater or stand up mixer. You just have to make sure you combine all ingredients really well. Pay special attention to the caramel filling that there are no lumps of cashew butter.
Beware you will need self control if you are a caramel or Biscoff lover!
Ingredients
Base
- 1 cup Plain Flour
- 1/4 cup Self Raising Flour
- 1/4 cup Brown/Coconut Sugar
- 130g Vegan Butter – melted
Filling
- 165g Cashew Butter
- 100g Vegan Butter – softened
- 1/4 cup Maple Syrup
- 1 teaspoon Vanilla Bean Paste
- 1 Jar Crunchy Biscoff Spread 400g
Topping
- 50g melted vegan chocolate

Instructions
Pre-heat fan forced oven to 170 degrees. Line a square baking pan with baking paper (20cm x 20cm).
Base
In a stand up mixer, use the paddle attachment. Place the plain & self raising flours in the bowl. Add the brown sugar. Mix together until all dry ingredients are combined. Pour in the melted butter and slowly mix the butter in. Gradually turn up the speed until all ingredients form a dough. Press mixture into the baking pan and place in the oven for 10 minutes.
Once cooked, remove from oven and let it cool for 5-10 minutes before placing the caramel filling on top.
Filling
Clean the bowl and paddle of the mixer. Place in the cashew butter, softened butter, maple syrup and vanilla bean paste in the bowl. Place on a medium speed and mix until it starts to form a caramel. Scrap down the sides of the bowl and mix for a few more seconds to make sure everything is combined. Pour the caramel filling on to the base, spread evenly with a spatula. Place in the freezer for around 30 minutes or until the caramel has hardened.
Place the jar of Biscoff spread in a bowl of boiling water so the spread melts. Otherwise you can remove all the foil off the top and place in the microwave for 30 seconds. Pour the whole jar of melted Biscoff over the top of the caramel filling, use a spatula to spread evenly. Put the slice back into the freezer until the Biscoff has gone hard.
Remove from baking pan and place on a chopping board. Cut the slice into desired sized pieces. Spread the slices apart and drizzle with some vegan melted chocolate. Place back into freezer/fridge and let the chocolate harden.
You can either use a double boiler to melt the chocolate. Alternatively, place the chocolate in a ceramic mug. Microwave it for 60 seconds, then stir. Put it back in for another 30 seconds. Stir until the chocolate is completely melted.

This slice will keep in the fridge for a week or can can be frozen in an airtight container.
