Easy Chewy Muesli Bars with Turmeric

The humble muesli bar has also been a favourite in our family. This recipe is so simple and requires no baking. Only heating the nut butter, rice malt syrup, and butter in the saucepan to help the slice set. It also makes it super chewy.

This slice includes the traditional favourites. Oats, seeds, nuts, and dried fruit. The only difference is the golden turmeric powder. This superfood helps balance out the sweetness of the slice and also has many health benefits. It is beneficial to use a turmeric powder that is high is curcumin with added black pepper. The black pepper helps your body absorb the nutrients. You can get a good quality turmeric spice blend at any Health Food Shop.

Ingredients

  • 2 1/2 cups rolled oats
  • 1/4 cup each of Pumpkin seeds, Sunflower seeds, Raw buckwheat, Hemp seeds & Goji berries,
  • 1/2 cup Almonds roughly chopped
  • 2-3 teaspoons golden turmeric – optional
  • 60g Vegan butter
  • 2/3 cup Rice malt syrup
  • 2/3 cup Cashew Butter (can use alternative nut butter)
  • 100g Medjool/Organic dates – chopped
  • Shredded or Desiccated coconut

Method

Line a rectangle baking tray with grease proof paper.

Melt the vegan butter in a small saucepan. Then add in the rice malt syrup and cashew butter. Stir until smooth and combined now add in the chopped dates. On a low simmer keep mixing for about 3 minutes. Don’t leave it on the stove alone, because it will burn! You want the dates to be softened. Remove the saucepan from the heat and let it cool down a little, while you prepare the dry ingredients.

In a large mixing bowl mix together the oats, all the seeds, buckwheat, goji berries, almonds and golden turmeric. Pour in the butter mixture from the saucepan and give it a good stir. This will take a little muscle power to make sure everything is well combine.

Next pour muesli mixture into the baking tray and press down firmly. Sprinkle some coconut over the top. Press down again to make sure the coconut stays on top. Now place in the fridge for a few hours or the freezer for up to an hour to set properly.

Remove from baking tray and cut into desired slices.

You can keep this in the fridge for a couple of weeks. Alternatively, freeze it in a sealed container for a few months.
