Vegan – Gluten Free
These simple fritters are so delicious and verstile to enjoy by themselves or in a burger. They are a little more dense than your typical fritter with the grated potato and besan flour. Besan flour is also known as chick pea flour, adding some extra protein into the dish!
Ingredients
- 550g zucchini – grated
- 450g potato – peeled and grated
- 2 teaspoons smoked paprika
- 2 teaspoons onion powder
- 2 teaspoons crushed garlic
- Salt and Pepper
- 250g corn kernels (420g can corn – drained)
- Handful chopped fresh herbs (dill, coriander, parsley, chives)
- 3/4 cup besan flour (chickpea flour)
- 1/2 cup gluten free flour
- 1 teaspoon baking powder
- 1/4 cup nutritional yeast
- 1/2 cup water
- Oil
Method
Grate the zucchini, place in a bowl with a pinch of salt. Mix the salt through the zucchini and let it sit at room temperature for about 30 minutes – 1 hour. This allows the salt to do its magic, water will be sitting in the bottom of the bowl. Place the zucchini in a clean cloth and strain out the water.
Peel and grate the potato. Place the potato into a bowl. Add the squeezed out zucchini, smoked paprika, onion powder, crushed garlic, fresh herbs, and corn kernels.
Mix everything together. Then add in the besan and gluten free flours, baking powder, and nutritional yeast. Give it a good mix. Add in 1/2 cup of water and mix together with a wooden spoon. The mixture should not be too runny. Let the mixture sit for about 15 minutes.
Place a little oil in a frypan so it covers the bottom of the pan. Place on the stove to heat up the oil on a medium heat. Be careful not to overheat, as this will burn your first batch of fritters. When you think the pan is hot enough, place a teaspoon of mixture in to test it out. You want a nice golden colour on your fritters.
Place about 1/2 cup of batter in the frypan and cook both sides for about 5 -6 minutes each side. To test if they are cooked gently press down in the centre of the fritter to make sure it’s firm. If you think they are still gooey in the middle place them in a moderate oven for about 10 minutes. I finish the fritters in the oven or air fryer. This ensures they are completely cooked through.

These are super delicious served tomato relish and a fresh garden salad. Also try it in a burger or a wrap with avocado and your favourite salad mix.
